Darby's menu was developed by and continues to evlove under the direction of Executive Chef Alex
Rotherham. While staying true to a classic pub menu, Chef Rotherham has brought a focus on higher quality, and bolder flavours.
All the sauces, soups and dressings are prepared from scratch in Darby's very cozy kitchen.
Darby's has recently joined the Vancouver Aquarium's Oceanwise program. The entire menu currently meets the requirements for 100% Oceanwise certification.
Chef Rotherham is also continuing to source more local and Canadian ingredients.
Darby's features some amazing Canadian products, such as our edam cheese and our 3 year old white cheddar. Our poultry and pork products are sourced locally, and when in season a large percentage of our produce is from British Columbia-and coming from California when it is not.
